Cowboy Stuffed Spuds

Ingredients


4- large russet potatoes, washed and pricked with fork
1/2 lb.   lean ground beef or turkey
1/2 cup       chopped onion
1/4 cup       chopped bell pepper
1 can           (19 oz.) pork and beans
1/2 cup       barbecue sauce
2 tsp.    yellow mustard
garnish        grated cheddar or Monterey Jack cheese
to taste       salt and pepper


Directions


       Bake potatoes at 400º F. about 1 hour or until tender.  Remove from oven and cool slightly.  Scoop out inside of potatoes, leaving a 1" shell.  Season reserved potato with salt, pepper and a little butter, if desired.  Spoon potato mixture back into potato shells.
       Cook ground beef in a skillet until browned.  Drain off fat.  Add onion, bell pepper, beans, barbecue sauce and mustard.  Cook over low heat for 6 - 7 minutes.   Place each potato on a serving plate.  Top with some of the bean mixture and grated cheese.
