Chicken Divan

2 boneless skinless Chicken breast halves, (about a pound total) cut into pieces about 1 inch by 2 inches
1/2 pound of fresh broccoli tops cut into spears
1 can, cream of mushroom soup ( I use fat free)
1 cup light mayonnaise
2 heaping TBS curry powder
2 TBS of butter, margarine or Smart Balance (which is what we use all the time)
1/2 cup of shredded mild cheddar cheese (I use a four cheese Mexican blend)
1/2 cup of bread crumbs

Put the broccoli spears in a 3 quart covered casserole with 2 tablespoons of water. Microwave on high for 2 minutes, add the chicken, microwave on high for 4 minutes. If chicken is not white and some still looks raw, microwave for 2-3 more minutes. Remove from microwave and drain the water from the casserole dish.

Put butter in a small microwave bowl and microwave for 30 seconds or until butter melts. Stir in bread crumbs and put the bowl to the side.

In a bowl, or measuring cup, whatever, mix the curry powder, mushroom soup, and mayonnaise. Pour mixture over the broccoli and chicken. Stir to incorporate. Sprinkle half the cheese over the top. Spread the breadcrumb/butter mixture over the top of all the former. Sprinkle the rest of the cheese over the breadcrumbs. Cover the dish and bake in a 350 degree for 30 minutes. Uncover and bake for 15 more minutes, Should be bubbly hot and little brown on the top.

Serve over rice. A wild mixture is good, but any rice you like will work
