Candied Apples
Green Granny Smiths go well with the sweet white and bittersweet chocolates, but use any apple you like. Look for wooden sticks at craft supply stores, or use forks instead.
6 Granny Smith apples
3 ounces bittersweet chocolate, coarsely chopped
2 1/2 ounces premium white baking chocolate (such as Baker's), coarsely chopped
Wash and dry apples; remove stems. Insert a wooden stick into the stem end of each apple.
Place bittersweet chocolate in a glass bowl; microwave at HIGH 1 minute or until melted, stirring every 20 seconds until smooth. Working with 1 apple at a time, hold apple over bowl. Using a spoon, drizzle apple with about 2 teaspoons bittersweet chocolate. Place apple, stick side up, on a baking sheet covered with wax paper. Repeat procedure with remaining apples.
Place white chocolate in a glass bowl; microwave at HIGH 1 minute or until melted, stirring every 15 seconds until smooth. Working with 1 apple at a time, hold apple over bowl. Using a spoon, drizzle apple with about 1 1/2 teaspoons white chocolate. Place apple, stick side up, on baking sheet covered with wax paper. Repeat procedure with remaining apples. Chill apples until ready to serve. Yield: 6 servings (serving size: 1 apple)

MULLED APPLE CIDER WITH ORANGE AND GINGER
8 cups unpasteurized apple cider
A 3-inch cinnamon stick
10 whole cloves
1 navel orange, peeled and sliced crosswise
A 2-inch piece of peeled fresh ginger, cut into 6 slices
In a large saucepan combine the cider, the cinnamon stick,
the cloves, the orange and the ginger and simmer the mixture
for 20 minutes. Strain the mixture through a fine sieve into
a heat-proof pitcher and serve the mulled cider warm.
Makes about 8 cups.

Fresh Apple Pound Cake
3 med. delicious apples - peeled, cored, chopped fine
1/2 c. sugar
Mix together & set aside.
3 c. flour
1 3/4 c. sugar
1 t. salt
1 1/2 t. baking soda
1 t. cinnamon
1 t. nutmeg
Stir together (preferablly with a wooden spoon) in large mixing
bowl. Make a well in the center & pour in...
1 1/2 c. vegetable oil
3 eggs
1 t. white vinegar
Stir by hand until batter is well mixed.
Add apple/sugar mixture & stir again.
Bake in a greased & floured 10" tube pan....preheated 350 degree
oven for 1 hr. 15 min. or until it tests done.
Icing:
8 oz. cream cheese (room temp.)
1 box (1 lb.) powdered sugar
Mix together til smooth ( I use a mixer for this) Spread just on
top of slightly warm cake...some may drizzle down the sides.
Polish Cabbages with Apples
1 md Head of cabbage
1 tb Salt
3 Or 4 green apples
2 Tomatoes (optional)
1 ts Sugar
1 tb Butter or..
3 sl Crisp bacon
2 Sliced onions
Shred cabbage. Cover cabbage and onion with boiling water. Let
stand 10 minutes. Place butter or broken bacon slices in the bottom
of a kettle.
Add drained cabbage with onion, apples and tomatoes. Remove seeds from
tomatoes first. Seed will give a bitter taste to the cabbage. Add
sugar and simmer until tender, about 20 minutes. Salt while cooking.
Cinnamon Apple Jelly
1 quart apple juice
1 package (1.75 ounces) Sure-Jell
4 ½ cups sugar
3 tablespoons red cinnamon candies
Combine the apple juice and Sure-Jell in a large pan. Bring to a
rolling boil. Add sugar and candies and cook, stirring constantly,
until candies are melted and sugar is dissolved. Bring mixture to
boil and cook 2 minutes, stirring occasionally. Remove from heat.
Let mixture settle a few minutes,
then skim the foam from the top. Pour into sterilized jars.
Makes 6-7 pints.
Chocolate Apple Snack Cake
1-1/2 cups flour
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/4 cup oil
1 teaspoon lemon juice
1 teaspoon vanilla extract
1 cup peeled, chopped baking apples (1 medium apple)
2/3 cup sugar
1/4 teaspoon ground cinnamon
Preheat oven to 350. Grease an 8-inch square baking dish. In a
medium bowl, combine flour, cocoa, baking soda and salt.
Combine water, lemon juice and vanilla; add to the dry ingredients
and stir just until combined.
Toss apples with sugar and cinnamon; fold into batter. Pour into
prepared pan. Bake for 27 to 35 minutes, until cake tests done.
Apple Nut Cake
Cream together:
2 c. sugar
1/2 c. shortening
Add:
2 eggs
Sift together and add to above mixture:
2 c. flour
2 tsp. soda
2 tsp. cinnamon
1/2 tsp. salt
1 tsp. nutmeg
Add:
3-6 TBSPS. water 1 tsp. vanilla
4 c. apples, unpeeled, diced
1 c. nuts
Bake in 12x 7 1/2" pan at 350º for 45 min.- 1 hour
Icing:
1 (3oz.) pkg. cream cheese
4 tsp. oleo
1 1/2 c. powdered sugar
1 tsp. vanilla
1/2 c. chopped dates
1/2 c. coarsely chopped pecans
1/4 c. shredded coconut, if desired
Apple And Bacon Cornbread Stuffing
Cornbread:
1 1/2 cups all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
2 large eggs
3/4 cup milk
1/2 cup butter or margarine
Stuffing:
3/4 pound bacon -- cut into 1 inch pieces
2 tablespoons butter or margarine
3 medium apples -- cored and cut into 1 inch pieces
3 ribs celery -- chopped
6 scallions -- chopped
1 tablespoon fresh parsley -- chopped
2 teaspoons dried marjoram
1 teaspoon dried sage
1/2 teaspoon salt
1/2 teaspoon pepper
2 large eggs
1 3/4 cups chicken broth
Preheat oven to 400 degrees F. Grease 9" square baking pan.
Combine flour, cornmeal, sugar, baking powder and salt. Make a well
in center of these dry ingredients and add eggs, milk and butter. Stir
until just combined.
Spoon batter into pan. Bake 20-25 minutes or until toothpick inserted into
center comes out clean. Cool on wire rack 10 minutes. Remove from pan
and cut into 1" cubes. Place on ungreased baking sheet. Bake until
cubes are toasted, about 30 minutes.
In large skillet over medium heat, cook bacon until crisp, about 15
minutes.
With slotted spoon remove bacon to paper towels. Reserve 2 tbsp.
drippings.
In same skillet over medium heat melt butter in reserved drippings.
Add apples and celery. Cook until tender, about 15 minutes. Stir in
scallions, parsley, marjoram, sage, salt, and pepper.
In a medium bowl, whisk together eggs and broth. In large bowl combine
corn bread cubes, bacon and apple mixture. Stir in egg-broth mixture
until just combined. Fill turkey cavities with some stuffing. Spoon
remaining stuffing into greased 2-quart casserole, cover, and put in oven
to heat through 30 minutes before turkey is done.

APPLES FOURNOU
Baked Stuffed Apples are an absolute favourite in Greece. There are
many various ways to prepare them. This is a particularly delicious
method and you might like to try
placing the cooked apple on a bowl of thick creamy plain yoghurt
(Greek strained yoghurt if available) and topping the apple and
yoghurt with honey.... heaven...
4 large golden apples
8 tbspns crushed walnuts
2 crushed biscuits (Graham crackers or Digestive biscuits)
4 tbspns fruit jam (marmalade) of your choice
30 gr - 1 oz golden sultanas
a little butter
Soak the sultanas in warm water to soften them for 30 minutes and then
drain them well and towel dry them. Wash and core the apples but DO
NOT peal them. Cut incisions into the peal in 3 places in each apple without damaging the
fruit. Cut out 4 generous sheets of aluminium foil. Each big enough
to wrap an apple inside. Brush
each sheet of foil with butter and place one apple in the centre of
each piece. Mix the jam, crushed walnuts, biscuits and sultanas in a
bowl and then spoon an even amount
into the centre of each cored out apple. Wrap the apples carefully in
the foil and bake them in a moderately preheated oven at 180 C - 350 F
for 25 minutes. Serve them hot
and knock yourselves out...
Old Fashioned Applesauce Cake
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon ginger
1/2 cup reduced-calorie margarine
1/4 cup molasses
1/2 cup egg substitute
1 teaspoon vanilla extract
1 cup SPLENDA® Granular
1/2 cup unsweetened applesauce
DIRECTIONS:
Preheat oven to 350 degrees F. Spray an 8x8 inch metal cake pan with
vegetable cooking spray.
In a small bowl, stir together flour, baking soda, cinnamon, and
ginger. Set aside.
In a large mixing bowl, beat margarine and molasses with an electric
mixer on high speed for approximately 1 minute.
Add egg substitute and vanilla and blend on high speed for 30 seconds.
Mixture will be very liquid.
Add SPLENDA and beat on medium speed until very smooth, approximately
1 1/2 minutes.
Add flour mixture and applesauce and beat on low speed until mixed,
approximately 45 seconds.
Spread batter evenly into prepared pan and bake for 30 minutes at 350
degrees F.
Steen's Louisiana Yummy Yams 'N' Apples
6 med sized boiled yams (or one 1 lb can yams)
5 tbsps Steen's Pure Cane Syrup (heaping)
1 delicious apple
1/2 stick oleo
2 tbsps lemon juice
dash of cinnamon
Butter baking dish. Slice yams and place in baking dish. Peel and
thinly slice the apple over the yams. Sprinkle the apple slices with
lemon juice. Mix oleo, syrup and
cinnamon and bring to a boil. Pour over yams and apples.
Apple Cinnamon Bread
1 cup plus 3 tablespoons sugar
2 eggs
2 cups flour
1 t. soda
1 1/2 tablespoon buttermilk
1 t. cinnamon
1/2 cup shortening]
1 1/2 grated apples( I used granny smith and left the peel on)
1/2 t. salt
1/2 t. vanilla
1 cup pecans
Cream 1 cup sugar and shortening. Add eggs that have been slightly
beaten and apples. Mix n dry ingredients, vanilla, buttermilk n
pecans. Pour into greased loaf pan,
Sprinkle top with mixture of remaining sugar and cinnamon. Bake 350
for 1 hour or do toothpick test.
APPLE KUCHEN
Yield: 8 servings
2-1/3 cups flour
1 cup sugar
4 t. baking powder
1/2 t. salt
2 sticks butter, at room temperature
2 eggs, at room temperature
Filling:
4 large (2 pounds) Apples
1/4 cup plus 1 teaspoon sugar
1 T. lemon juice
2 T. raspberry or strawberry jam
2 t. cinnamon
Sweetened whipped cream
Garnish: cinnamon-sugar (optional)Preheat oven to 350° and position
oven rack on the center shelf. To make the dough, sift dry ingredients
into the bowl of an electric mixer.
Add butter and eggs and mix at medium-high speed until ingredients
form a ball, approximately 1 minute. Divide dough into two equal
pieces, wrap each in plastic wrap, and chill 30 minutes.
Meanwhile, peel, core, and slice apples into 1/4-inch pieces. Add 1/4
cup sugar and lemon juice and stir. Press one ball of dough into a
10-inch deep-dish pie plate. Cover
with the apple mixture. Top the apple mixture with small dabs of jam.
Divide the remaining dough into 10 equal-size balls and distribute
evenly on top of apples. Sprinkle with
the remaining 1 teaspoon sugar and cinnamon. Bake 40 minutes, or until
dough is golden brown. Remove to a cooling rack. Serve with a dollop
of sweetened whipped cream and garnish with cinnamon-sugar, if desired.
Cider Bread
3 1/2 c. flour
2 tsp. baking soda
3 tsp. cinnamon
1/2 tsp. ginger
3 c. sugar
1 tsp. salt
- Stir together.
Make a well in center and add, in order:
1 c. vegetable oil
4 whole eggs
1 1/2 c. canned pumpkin
2/3 c. apple cider
1/2 c. thick applesauce
Mix everything until smooth.
Pour into greased and flour pan.
Makes two 8 1/2 x 1 1/2 x 2 1/2 loaves.
Makes 3 baked 1 hour at 350 degrees.
Diabetic Apple Pie
4 apples, peeled, cored and sliced
1/2 cup splenda
1 TB flour
Dash of cinnamon
2 pie crusts, store bought or homemade
Toss apples, splenda and flour and cinnamon together.
Line 9" pie plate with crust, pour in apple mixture, top with second
pie crust; seal edges of crust.
Bake at 350º F., for about 1 hour or until crust in golden brown and
apples are tender.
Tortilla Apple Strudel
2 sticks (1 cup) butter
4 pounds Granny Smith apples
1/2 cup sour cream
1 1/2 cups brown sugar
1/2 teaspoon vanilla extract
Cinnamon to taste
1/8 cup lemon juice
6 very large, thin flour tortillas
Mix all ingredients, except tortillas, together.
Melt the butter, brushing it on one side of the tortillas. Put some apple
mixture across the end of the tortilla. Start to roll up the tortilla,
brushing it with butter as you go. Put into a 9 x 13-inch pan. Bake at
350 degrees F for 35 minutes.
Candied Apples
5 apples, peeled and sliced
1/4 cup water
1/2 half bag, red hots
2 tablespoons sugar
Place all ingredients in a saucepan and cook over medium heat until apples are
tender. The apples turn a beautiful color of red.
Flaky Apple Turnovers (WW)
1.5 WW points per serving
2 1/4 cups peeled, chopped cooking apples (about 3/4 pound)
1 1/2 teaspoons lemon juice
1/4 cup granulated sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1/8 teaspoon ground nutmeg
10 sheets frozen phyllo pastry, thawed
Vegetable cooking spray
Combine apple and lemon juice in a small bowl; toss gently. Add sugar,
flour and next 3 ingredients; toss well and set aside.
Spray 1 phyllo sheet at a time with cooking spray, and cut each sheet
lengthwise into 4 (3 1/4-inch wide) strips. Stack 2 strips, 1 on top of the
other. Spoon 1 heaping tablespoon apple mixture onto 1 end of each strip,
and spread to within 1 inch of end; fold the left bottom corner over
mixture, forming a triangle. Keep folding back and forth into a triangle to
end of strip. Repeat procedure with remaining ingredients. Place the
triangles, seam-side down, on a baking sheet. Lightly spray tops with
cooking spray. Bake at 400 degrees F for 7 minutes or until golden. Serve
warm.
Makes 20 turnovers.
