Regular Thanksgiving and Christmas Dinner
Devilled Eggs
- Hard Boil 6 eggs,
- Halve eggs lengthwise
Recipe is primarily to taste so feel free to substitute, add, subtract as you
like
- 1/2cup mayonnaise
- 1 tsp vinegar
- 1 tsp yellow mustard
- 1/8 tsp each salt, pepper cayenne red pepper
- Mix all with egg yellow in medium bowl
- spoon egg mix into egg halves
- place on plate or egg platter refrigerate overnight
- (optional) sprinkle paprika or cayenne red pepper on egg yellow for
color and additional taste. Best to leave on table for individuals to add as
desired
Cranberry Sauce Recipe
Home made version of Ocean Spray chill and serve Cranberry Sauce makes 2 1/4
cups.
Ingredients
- 1 cup (200 g) sugar
- 1 cup (255 mL) water
- 4 cups (1 12-oz package) fresh or frozen cranberries
- Optional Pecans, orange peel, raisins, currants, blueberries,
cinnamon, nutmeg, allspice.
- Wash and pick over cranberries. In a saucepan bring to a boil water
and sugar, stirring to dissolve sugar. Add cranberries, return to a boil. Reduce
heat, simmer for 10 minutes or until cranberries burst.
- At this point you can add all number of optional ingredients. We
typically mix in a half a cup of roughly chopped pecans with or without a few
strips of orange peel. You can add a cup of raisins or currants. You can add up
to a pint of fresh or frozen blueberries for added sweetness. Spices such as
cinnamon, nutmeg or allspice can be added too.
- Remove from heat. Cool completely at room temperature and then chill
in refrigerator. Cranberry sauce will thicken as it cools.
Baked Ham
- Pre-cooked Boneless ham
- Pre-heat oven to 325
- wrap tightly in foil
- cook for 20-30 minutes per pound
- 1 egg beaten
- 2 cups self rising Corn Meal Mix
- 1/3rd Cup Milk or Butter Milk
- 1/4 cup oil
Preheat Oven to 450 (if creating Pan of Cornbread pre-heat bacon grease in
iron skillet while mixing)
Mix Egg, Corn Meal, Milk and Oil
If making muffins spray pan with Pam
Chicken Dressing
- 1 small Chopped Onion (can replace with 1/4 cup minced onion)
- 1-2 chopped stalks of Celery (optional)
- 1 Jimmy Dean Mild Country Sausage
- 1/2 cup chopped pecan nuts
- 1-2 can of cream of chicken soup
- Chicken Broth
- Chicken Breast
- 1 recipe Southern Cornbread
- 2 boxes of stove top stuffing mix
- Boil chicken
- Saute Onion and celery for 5 minutes
- cook Sausage until Brown
- Use food processor to chop pecans, chicken, cornbread
- Pre-heat oven to 375
- Mix Sausage, Pecans, Chicken Breasts, Cornbread, cream chicken soup,
stuffing mix
- mix in broth until moist
- separate into two dishes and mix in onion and celery
- Bake middle rack 20 -30 minutes and move to top bake additional 15-25
minutes
Serve Dressing, Ham, Mac n Cheese, Mashed Taters, Brown Gravy, Devilled Eggs
and Chilled sliced Cranberry Sauce
Rolls and additional deserts as wanted depending on size of group
